Cocktail recipes for a summer’s day
As the UK gears up for a summer of long, lazy lunches and squeezing the last of the sun out of a crowded beer garden, here at Barbury Hill we’re starting to switch up our evening tipple. While the dark days of winter call for warming, whisky-based cocktail recipes, the summer months have us craving something a little lighter. And with a number of award-winning gin and vodka producers on Barbury Hill, we thought it was time to showcase the very best cocktail recipes to create with these wonderfully refreshing spirits.
Apple & Elderflower Bee's Knees - Penrhos Spirits
The delicate waft of elderflower as it drifts in on a breeze, the hint of apple from a nearby tree; these scents of summer are the epitome of Penrhos Spirits’ Apple & Elderflower Gin. But combining them with honey syrup and lemon juice adds a wonderfully enlivening and refreshing zest that makes this our go-to cocktail recipe in the summer months.
INGREDIENTS
50ml Penrhos Apple and Elderflower
25ml Lemon Juice
20ml Honey Syrup (50:50 mix of honey & hot water, dissolve and allow to cool)
METHOD
Add all of the ingredients to a cocktail shaker
Give them a good shake
Strain into a cocktail glass or coupe for a refreshingly reviving cocktail
Damson Cherry Vodka Sour - Gattertop Drinks
While Gattertop Drinks’ Damson Nº12 is already abundantly ripe with the flavours of summer, this cocktail recipe transforms it into the perfect aperitif. Ideal for marking the moment your long lunch slips into a summer’s evening.
INGREDIENTS
50ml Damson No12
25ml Amaretto
50ml lemon juice
50ml cherry juice
1 medium egg white
1 tbsp cherry Kirsh syrup or grenadine
A cherry and sprig of tarragon for garnish
METHOD
Add the ingredients to a cocktail shaker
Shake vigorously for one minute (particularly important for drinks using an egg white)
Pour into a tumbler and garnish with a cherry and a sprig of tarragon
Rosé Martini - Salcombe Gin Rosé Sainte Marie’
Combining the fresh breeze of the ocean with the Mediterranean warmth of the South of France; we can’t think of a cocktail recipe more perfectly suited to summer.
INGREDIENTS
50ml Salcombe Gin ‘Rosé Sainte Marie’
10ml Rosé Vermouth
5ml Elderflower liqueur
5ml Grapefruit juice
Orange peel
Ice
METHOD
Add ice to a martini glass and allow it to chill.
Combine the gin, rosé vermouth, elderflower liqueur, grapefruit juice and ice in a mixing jug, and stir briefly
Empty the ice from the martini glass.
Strain the cocktail into the glass and garnish with a twist of orange peel.
