West Dorset dairy farmer Jason Barber decided after nearly 200 years of successful cheese making on his family farm, that he was going to do things a little different. With cheese production still a significant part of the business, Jason’s efforts, like many of our Barbury Hill producers, have turned to championing sustainability by avoiding unnecessary waste. While the curds are used for cheese-making, the whey, a by-product of the cheese-making process, is used to create the vodka giving it an undeniably smooth finish.
At Barbury Hill we are passionate about discovering the best and shining a light on producers doing something a little different and Black Cow is doing just that. This is an innovative, unique and superior tasting vodka, made entirely from the milk of cows. Now that’s not something you discover every day!
Serving Suggestion: Espresso Martini

Ingredients: 50ml Black Cow, 40ml fresh, cooled coffee, 15ml maple syrup

Method: Put all three ingredients in a cocktail shaker, along with a handful of ice. Shake. But don’t just shake a little; shake a lot. Pour the drink into a martini glass. Leave a few minutes to fully settle. Garnish with one or two coffee beans.
